A hearty, nutritious, and budget-friendly ground beef stew packed with fresh vegetables and savory flavors.

Ingredients

1 lb lean ground beef

1 large yellow onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 stalks celery, chopped

4 medium Yukon Gold potatoes, cubed

1 tbsp tomato paste

4 cups beef broth

1 tsp dried thyme

1 dried bay leaf

1 cup frozen peas

Salt and pepper to taste

Instructions

1. Brown the beef in a large pot.

2. Add onion, celery, and garlic; sauté until soft.

3. Stir in tomato paste and beef broth.

4. Add potatoes, carrots, thyme, and bay leaf.

5. Simmer for 30 minutes until veggies are tender.

6. Stir in peas and cook for 3 minutes.

7. Season with salt and pepper and serve.

Notes

Substitute ground turkey for a lighter version.

Store in the fridge for up to 4 days.

Freeze leftovers for easy meal prep later.
