Colorful bell peppers stuffed with a savory blend of quinoa, black beans, and melted cheese.
4 bell peppers
1 cup cooked quinoa
1 can black beans, rinsed
1/2 cup corn
1/2 cup marinara or salsa
1 tsp cumin
1/2 tsp chili powder
1/2 cup shredded cheese
Salt and pepper
1. Remove seeds and tops from peppers.
2. Mix quinoa, beans, corn, sauce, and spices.
3. Stuff peppers with the mixture.
4. Air fry at 360°F (180°C) for 12 mins.
5. Top with cheese.
6. Air fry 3–5 mins until cheese melts.
7. Serve with cilantro and lime.
Quinoa must be pre-cooked.
Choose peppers with flat bottoms to stand.
Substitute vegan cheese if desired.
