These Almond Butter Cookies are soft, chewy, and full of nutty flavor. With simple ingredients and no flour needed, they’re perfect for quick baking sessions or healthy sweet cravings.

Ingredients

Dry Ingredients:
– 1 teaspoon baking soda
– 1/4 teaspoon salt

Wet Ingredients:
– 1 cup creamy almond butter (unsweetened or natural)
– 3/4 cup packed brown sugar
– 1/4 cup granulated sugar
– 1 large egg
– 1 teaspoon pure vanilla extract

Optional Add-Ins:
– 1/2 cup chopped almonds
– 1/2 cup chocolate chips
– A pinch of cinnamon or nutmeg

Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together baking soda and salt.
3. In another bowl, mix almond butter, sugars, egg, and vanilla until creamy.
4. Combine wet and dry ingredients. Add optional mix-ins if desired.
5. Scoop dough into small balls and place them on the baking sheet.
6. Flatten slightly with a fork and bake for 8–10 minutes until edges are golden.
7. Cool on the tray before transferring to a wire rack.

Notes

Store in an airtight container for up to 5 days. You can freeze the dough balls and bake them later for fresh cookies anytime!
