Golden, crunchy flour tortillas filled with savory seasoned ground beef, refried beans, and oceans of melted cheese.
1 lb lean ground beef
1 small onion, diced
2 cloves garlic, minced
1 tbsp taco seasoning
1 can (16 oz) refried beans
2 cups shredded cheddar or monterey jack cheese
6 large flour tortillas
1/4 cup sour cream
Vegetable oil for frying
1. Brown beef with onion and garlic; drain fat.
2. Stir in taco seasoning and refried beans.
3. Mix in sour cream and 1 cup of cheese until melted.
4. Warm tortillas and fill with beef mixture and remaining cheese.
5. Fold into tight rectangular envelopes.
6. Fry in 1 inch of oil at 350°F until golden brown.
7. Drain on a wire rack.
8. Serve hot with salsa and sour cream.
Air fryer: Spray with oil and cook at 400°F for 10 minutes.
Make ahead: Assemble and refrigerate before frying.
