Authentic Old Fashioned Rice Pudding

A rich and velvety traditional rice pudding made on the stove with whole milk, vanilla, and a touch of cinnamon.

Ingredients

3/4 cup short-grain white rice

1 1/2 cups water

1/4 tsp salt

2 cups whole milk, divided

1/3 cup granulated sugar

1 large egg

1 tbsp unsalted butter

1 tsp pure vanilla extract

1/2 tsp ground cinnamon

Instructions

1. Boil rice, water, and salt in a saucepan.

2. Simmer covered for 15 minutes.

3. Stir in 1.5 cups milk and sugar; cook 20 minutes.

4. Whisk egg with remaining milk.

5. Temper egg mixture with hot rice.

6. Add back to pot and thicken for 2 minutes.

7. Stir in butter and vanilla.

8. Serve warm with cinnamon.

Notes

Use Arborio rice for the creamiest texture.

Press plastic wrap on surface to prevent skin.

Add raisins during the last 10 minutes if desired.
