1.5 lbs fresh salmon fillet, skin removed and cut into chunks
1/2 cup panko breadcrumbs (or almond flour)
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
1 large egg, beaten
1 tsp lemon zest
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
2 ripe avocados
1/4 cup Greek yogurt
1 tbsp lime juice
1. Preheat oven to 400°F (200°C) and line a baking sheet.
2. Pulse salmon in food processor until chopped.
3. Mix salmon with breadcrumbs, egg, herbs, and spices.
4. Form into balls and place on baking sheet.
