A creamy and chewy no-bake dessert that combines the classic flavor of southern banana pudding with the crunch of rice krispie treats.
6 cups Rice Krispies cereal
10 oz mini marshmallows
5 tbsp unsalted butter
1 box (3.4 oz) instant banana pudding mix
1 cup crushed vanilla wafers
1 tsp vanilla extract
Optional: white chocolate drizzle and whole wafers for garnish
1. Line a 9×13 inch pan with parchment paper.
2. Melt butter in a large pot over low heat.
3. Stir in marshmallows until 80% melted.
4. Remove from heat and stir in pudding mix and vanilla extract.
5. Fold in Rice Krispies and crushed vanilla wafers.
6. Press mixture gently into the prepared pan.
7. Allow to cool for 30 minutes.
8. Drizzle with white chocolate if desired and slice into squares.
Use fresh marshmallows for the best texture.
Do not overheat the marshmallows or the treats will be hard.
Store in an airtight container at room temperature.
