Bright and tangy key lime cookies with a buttery graham base and a creamy key lime filling. Chilled for a glossy, meltaway finish that brings key lime pie vibes in a handheld cookie.

Ingredients

– 1 ¾ cups all-purpose flour
– ¾ cup graham cracker crumbs
– ½ tsp baking powder
– ½ tsp baking soda
– ½ tsp fine salt
– ½ cup unsalted butter, softened
– ⅓ cup cream cheese, softened
– ¾ cup granulated sugar
– ¼ cup light brown sugar
– 1 large egg
– 1 ½ tsp vanilla extract
– 2 tbsp key lime zest, divided
– ⅓ cup key lime juice, strained
– 1 ¼ cups powdered sugar
– Extra graham crumbs and lime zest for garnish

Instructions

1. Whisk dry ingredients; set aside.
2. Cream butter, cream cheese, and sugars; add egg and vanilla.
3. Mix in dry ingredients just until combined.
4. Scoop, indent centers, and bake until edges set.
5. Whisk powdered sugar with key lime juice and half the zest.
6. Cool cookies, top with filling, add zest and graham; chill to set.

Notes

For strongest aroma, rub zest into sugar before mixing. Strain juice for a smooth, glossy filling. Chill assembled cookies 30–45 minutes before serving.
