Bright citrus lime bars with a tender shortbread crust and a silky lime custard layer.
1 cup (225 g) unsalted butter, softened
2 cups (240 g) all-purpose flour
1/2 cup (60 g) powdered sugar
1/4 cup (30 g) cornstarch
1/4 tsp fine salt
1 3/4 cups (350 g) granulated sugar
4 large eggs
1 tbsp finely grated lime zest
2/3 cup (160 ml) fresh lime juice
3 tbsp all-purpose flour
Powdered sugar, for dusting
1. Heat oven to 350°F (175°C) and line a 9×13-inch pan.
2. Mix crust ingredients to form dough and press into pan.
3. Bake crust 18–20 minutes until lightly golden.
4. Whisk filling ingredients until smooth.
5. Pour over hot crust and bake 20–24 minutes.
6. Cool fully, chill, dust with powdered sugar, slice.
Use fresh lime juice for best flavor.
Chill fully for clean cuts.
Freeze undecorated bars up to 3 months.
