A luxurious and comforting seafood dish featuring tender lobster meat and fresh vegetables in a velvety cream sauce, all tucked under a golden, flaky puff pastry crust.

Ingredients

1 lb lobster meat, chopped

1 sheet puff pastry, thawed

2 cups lobster or seafood stock

1/2 cup heavy cream

1 cup frozen peas

2 carrots, diced

2 stalks celery, sliced

1 small onion, chopped

3 tbsp all-purpose flour

4 tbsp unsalted butter

1 tbsp fresh thyme

1 egg (for egg wash)

Salt and pepper to taste

Instructions

1. Preheat oven to 400°F (200°C).

2. Sauté onions, carrots, and celery in butter until soft.

3. Stir in flour and cook for 2 minutes.

4. Whisk in stock and simmer until thickened.

5. Fold in cream, lobster, peas, and thyme.

6. Pour mixture into ramekins or a baking dish.

7. Cover with puff pastry and brush with egg wash.

8. Bake for 20-25 minutes until golden and bubbling.

Notes

Use high-quality puff pastry for the best rise.

Fresh or frozen lobster meat works perfectly.
