1.5 lbs chicken breast, sliced
2 large sweet potatoes, cubed
1/4 cup pure maple syrup
3 tbsp Dijon mustard
2 tbsp olive oil
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 cups fresh spinach
1.Preheat oven to 400°F (200°C).
2.Whisk maple syrup, dijon, oil, and spices.
3.Toss chicken and potatoes in the glaze on a sheet pan.
