A crispy, golden Mediterranean Grilled Cheese Sandwich packed with savory pesto, gooey mozzarella, tangy feta, and fresh spinach. The perfect easy vegetarian lunch.
4 slices sourdough bread
2 tbsp olive oil (for brushing)
1 tbsp butter (for pan)
1 cup mozzarella cheese, shredded
1/2 cup feta cheese, crumbled
2 tbsp basil pesto
1/2 cup fresh spinach leaves
1/4 cup sun-dried tomatoes, chopped
2 tbsp Kalamata olives, sliced (optional)
1. Prepare the bread by brushing olive oil on the outer sides.
2. Spread pesto on the inside of two slices.
3. Layer half the mozzarella on the pesto.
4. Add spinach, sun-dried tomatoes, and olives.
5. Sprinkle crumbled feta over the veggies.
6. Top with remaining mozzarella and close sandwich.
7. Heat butter in a skillet over medium heat.
8. Cook sandwiches for 3-4 minutes per side until golden.
9. Let rest for 1 minute before slicing.
Use low-moisture mozzarella for the best melt.
Pat spinach dry to avoid sogginess.
Serve with tomato soup or a fresh Greek salad.
