1 cup cottage cheese
2-3 ripe bananas, mashed
2 large eggs
1/3 cup honey or maple syrup
1 tsp vanilla extract
1.5 cups all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1.Preheat oven to 350°F (175°C) and grease a loaf pan.
2.Mash bananas in a large bowl.
3.Stir in cottage cheese, eggs, honey, and vanilla.
4.Whisk dry ingredients in a separate bowl.
5.Combine wet and dry ingredients until just mixed.
6.Pour into pan and bake for 45-55 minutes.
7.Cool in pan before slicing.
