Fluffy, savory-sweet sausage pancake bites baked in a mini muffin pan for the ultimate portable breakfast ideas. Perfect for school mornings, tailgates, and brunch, with an optional maple sheen and simple 3 ingredient breakfast method.

Ingredients

– 1 cup pancake mix (plus water per package)
– 12 fully cooked breakfast sausage links, cut in thirds (maple optional)
– 1 large egg (optional)
– 2 tbsp maple syrup (optional)
– 1 tsp vanilla (optional)
– Nonstick spray or butter for pan

Instructions

1. Heat oven to 375°F; grease a 24-cup mini muffin pan.
2. Mix pancake batter; optionally whisk in egg and vanilla.
3. Fill each cup with 1 tbsp batter; add a sausage piece; cover lightly.
4. Bake 10–12 minutes until set; brush with maple; cool 3 minutes; release.

Notes

Refrigerate up to 4 days; freeze up to 2 months. Reheat at 325°F until warm or microwave briefly. Serve with maple syrup.
