– 1 lb ground beef or turkey
– 1 small onion, diced
– 1/2 green bell pepper, diced
– 2 cloves garlic, minced
– 1 cup tomato sauce
– 2 tbsp ketchup
– 1 tbsp yellow mustard
– 1 tbsp Worcestershire
– 1 tsp brown sugar
– 1/2 tsp smoked paprika
– 1/4 tsp chili flakes
– Salt and pepper, to taste
– 8 slices Texas toast
– 6–8 slices cheddar
– 3 tbsp butter
1. Sauté onion and bell pepper in butter; add garlic for 30 seconds.
2. Brown meat; drain. Stir in sauce ingredients; simmer to thicken.
3. Butter bread; layer cheddar, filling, cheddar; top with bread.
4. Griddle 2–3 minutes per side until golden and melty; rest and slice.
