Soft, chewy cookie bars featuring the rich aroma of browned butter, the sweetness of honey, and the crunch of roasted pistachios.
10 tbsp unsalted butter
1 cup light brown sugar, packed
3.5 tbsp honey
1 large egg
1 large egg yolk
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp flaky sea salt
1/2 cup shelled salted pistachios, chopped
1. Brown the butter in a saucepan until nutty.
2. Whisk butter with brown sugar and honey.
3. Add egg, yolk, and vanilla; whisk until smooth.
4. Fold in flour and salt.
5. Stir in most of the pistachios.
6. Spread in an 8×8 pan.
7. Top with remaining pistachios and salt.
8. Bake at 325°F for 22-25 minutes.
Do not overbake for maximum chewiness.
Store in an airtight container for up to 5 days.
