A moist and flavorful quick bread using sourdough discard, fresh strawberries, and rich chocolate chips. Perfect for brunch or a sweet Valentine’s treat.
1 cup sourdough discard (unfed)
2 cups all-purpose flour
3/4 cup granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup melted butter
1 large egg
1 tsp vanilla extract
1.5 cups diced strawberries
1/2 cup chocolate chips
1. Preheat oven to 350°F and grease a loaf pan.
2. Whisk dry ingredients in a large bowl.
3. Mix wet ingredients in a separate bowl.
4. Combine wet and dry ingredients until just mixed.
5. Fold in strawberries and chocolate chips.
6. Pour into pan and bake for 50-55 minutes.
7. Cool in pan for 10 minutes, then transfer to a rack.
Use freeze-dried strawberries for more intense flavor.
Do not overmix the batter to keep it tender.
Store in an airtight container for up to 3 days.
