1 cup cottage cheese
2 eggs
1/3 cup maple syrup
1 1/2 cups all-purpose flour
1/2 cup rolled oats
1 tsp baking powder
1 tsp vanilla extract
1 tsp cinnamon
1/4 cup melted butter
2 tbsp brown sugar
1. Preheat oven to 375°F and grease a muffin pan.
2. Whisk cottage cheese, eggs, syrup, and vanilla.
3. Stir in flour, oats, baking powder, and half the cinnamon.
4. Mix butter, brown sugar, and remaining cinnamon in a small bowl.
