A rich and cheesy low-carb casserole featuring tender chicken breasts baked in a savory cream cheese and spinach sauce, topped with melted mozzarella.

Ingredients

1 lb boneless, skinless chicken breasts

8 oz cream cheese, softened

10 oz fresh spinach (approx. 4-5 cups)

1 cup shredded mozzarella cheese

2 tbsp olive oil

3 cloves garlic, minced

1 tbsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

Instructions

1. Preheat oven to 400°F (200°C) and lightly grease a 9×13 baking dish.

2. Season chicken breasts with olive oil, garlic, Italian seasoning, salt, and pepper.

3. Layer fresh spinach in the bottom of the baking dish.

4. Top spinach with cubes of softened cream cheese.

5. Place seasoned chicken breasts on top of the spinach and cream cheese.

6. Sprinkle shredded mozzarella cheese evenly over the chicken.

7. Bake for 20-30 minutes until chicken reaches 165°F (74°C).

8. Let rest for 5 minutes before serving to allow sauce to thicken.

Notes

Use fresh spinach for best texture, but thawed frozen spinach works if squeezed dry.

Store leftovers in an airtight container in the fridge for up to 3 days.

Serve with a side salad or roasted vegetables.
