1 lb lean ground beef
12-14 hard taco shells
2 cups shredded Mexican cheese blend
15 oz can black beans, rinsed
1 medium yellow onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1/2 cup red enchilada sauce
Fresh cilantro for garnish
1.Preheat oven to 400°F (200°C).
2.Brown beef with onion and garlic; drain fat.
3.Stir in seasoning, beans, and sauce; simmer.
4.Stand shells in a 9×13 baking dish.
