A hearty and comforting slow cooker meal featuring tender cabbage, savory smoked sausage, and soft potatoes in a seasoned broth.

Ingredients

1 medium head green cabbage, chopped

1.5 lbs potatoes, cubed

14 oz smoked beef or turkey sausage, sliced

1 large onion, diced

3 cloves garlic, minced

1 cup chicken or vegetable broth

2 tbsp olive oil

1 tsp paprika

1 tsp dried thyme

Salt and pepper to taste

Instructions

1. Chop the cabbage, potatoes, and onion into uniform pieces.

2. Place potatoes and onions at the bottom of the crockpot.

3. Add the sliced sausage in a layer over the vegetables.

4. Top with the chopped cabbage.

5. Whisk broth, oil, garlic, and spices together and pour over the top.

6. Cover and cook on Low for 7-8 hours or High for 4 hours.

7. Stir gently before serving to combine flavors.

Notes

Use Yukon Gold potatoes for the best texture.

Beef or turkey kielbasa works perfectly for a pork-free version.

Add a splash of apple cider vinegar at the end for brightness.
