Ingredients

– 1 lb ground beef (90/10)
– 1 small onion, diced
– 3 cloves garlic, minced
– 1 tbsp chili powder
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 1/2 tsp oregano
– 1/2 tsp kosher salt
– 1/4 tsp black pepper
– 1/2 cup tomato sauce or salsa
– 1 cup cooked rice
– 1 cup black beans, rinsed
– 1 1/2 cups shredded cheddar or Mexican blend
– 6 large flour tortillas (10-inch)
– Optional: cilantro, lime, sour cream, pico de gallo

Instructions

1. Sauté onion in oil 3 minutes; add garlic 30 seconds.
2. Brown ground beef; drain if needed.
3. Stir in spices; bloom 30 seconds.
4. Add tomato sauce or salsa; simmer 2–3 minutes.
5. Warm tortillas; fill with rice, beans, beef, and cheese.
6. Roll tightly; sear 1–2 minutes per side if desired.
7. Serve with cilantro and lime.
