A cozy one-pan bake with juicy chicken, sautéed bell peppers, onions, fluffy rice, and melty cheese—perfect for easy weeknight meals and dinners served over rice.

Ingredients

– 2 cups cooked rice
– 1.5 lbs chicken breast, thinly sliced
– 3 bell peppers (red, yellow, green), sliced
– 1 medium onion, sliced
– 2–3 tbsp fajita seasoning
– 2 tbsp olive oil
– 1 cup low-sodium chicken broth
– 1.5 cups shredded cheddar and Monterey Jack
– 1 lime, cut into wedges
– 2 tbsp chopped cilantro
– Salt and pepper to taste

Instructions

1. Heat oven to 400°F; grease a 9×13-inch pan. Spread rice.
2. Sauté peppers and onions in oil until softened with slight char; remove.
3. Season chicken; sear until just opaque.
4. Layer veggies over rice, add chicken; pour broth.
5. Top with cheese; bake 15–18 min until bubbly.
6. Rest 5 min; garnish with cilantro and lime.

Notes

Serve with extra rice or warm tortillas. Add beans or corn to stretch for meals for large families.
