1 cup unsalted butter, softened

3/4 cup icing sugar

1 large egg yolk

2 cups all-purpose flour

2 tbsp cornstarch

1.5 tbsp instant coffee powder dissolved in 1 tsp warm water

1/4 tsp salt

1 tsp vanilla extract

Instructions

1. Dissolve coffee in warm water.

2. Cream butter and sugar until fluffy.

3. Mix in egg yolk, vanilla, and coffee.

4. Fold in flour, cornstarch, and salt to form dough.

5. Pipe shapes, chill 30 minutes, then bake at 350°F (175°C) for 12–15 minutes.

6. Cool completely before serving.

Notes

Use milk instead of egg yolk for eggless version.

Chilling helps cookies keep their shape.

Store in an airtight container up to 1 week.
