1 3/4 cups all-purpose flour
2 cups granulated sugar
3/4 cup Dutch-process cocoa powder
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
1 1/2 cups dark chocolate squares
1 cup heavy cream
1. Preheat oven to 350°F and prep three 8-inch pans.
2. Whisk dry ingredients in a large bowl.
3. Add eggs, milk, oil, and vanilla; beat until smooth.
4. Stir in boiling water (batter will be thin).
5. Bake 30–35 minutes and cool completely.
6. Simmer cream and pour over chocolate to make ganache.
7. Stack layers with ganache and frost the exterior.
8. Let set for 30 minutes before serving.
Use 70% cocoa dark chocolate for best results.
Store at room temperature or refrigerate for longer shelf life.
