Tender sweet potato slices baked in a rich, garlic-infused cream sauce with a golden cheese crust.

Ingredients

3 lbs sweet potatoes, peeled and sliced 1/8-inch thick

1.5 cups heavy whipping cream

4 tbsp unsalted butter

6 cloves garlic, minced

1 tsp fresh thyme, chopped

1 cup shredded Gruyere cheese

0.5 cup grated Parmesan cheese

1 tsp sea salt

0.5 tsp black pepper

Instructions

1. Preheat oven to 400°F (200°C) and grease a 9×13 dish.

2. Simmer cream, butter, garlic, and thyme in a saucepan until butter melts.

3. Layer half of the sweet potatoes in the dish and season with salt/pepper.

4. Top with half of the Gruyere cheese.

5. Repeat with remaining potatoes and pour cream mixture over the top.

6. Cover with foil and bake for 30 minutes.

7. Remove foil, top with remaining Gruyere and Parmesan.

8. Bake uncovered for 20-25 minutes until golden.

9. Let rest 10 minutes before serving.

Notes

Use a mandoline for even potato slices.

Substitute rosemary for thyme if preferred.

Make ahead up to 24 hours and bake before serving.
