A rich and aromatic lamb and potato curry slow cooker recipe featuring tender meat and hearty potatoes in a savory spiced gravy.

Ingredients

2 lbs lamb shoulder, cubed

3 large russet potatoes, peeled and cubed

2 onions, finely diced

3 cloves garlic, minced

1 tbsp fresh ginger, grated

14 oz crushed tomatoes

2 tbsp curry powder

1 tsp turmeric

2 cups beef stock

Fresh cilantro for garnish

Instructions

1.Sear lamb in a pan until browned.

2.Add onions, garlic, and ginger to the slow cooker.

3.Place lamb and potatoes into the pot.

4.Stir in tomatoes, stock, and spices.

5.Cook on low for 7–8 hours.

6.Garnish with cilantro and serve warm.

Notes

Use lamb shoulder for the best tenderness.

Substitute sweet potatoes for a Paleo version.

Serve with basmati rice or naan bread.
