Fudgy, bright, and irresistibly sweet pink brownies made with strawberry cake mix and topped with a tart lemon glaze.

1 box (15.25 oz) strawberry cake mix

2 large eggs

1/3 cup vegetable oil

1/2 cup fresh strawberries, diced

1 cup powdered sugar

2 tbsp lemon juice

1/2 tsp lemon zest

Instructions

1. Preheat oven to 350°F and line an 8×8 pan.

2. Mix cake mix, eggs, and oil until thick.

3. Fold in diced strawberries gently.

4. Spread batter into pan and bake 20-25 minutes.

5. Cool completely in the pan.

6. Whisk powdered sugar, lemon juice, and zest.

7. Pour glaze over brownies and let set.

8. Slice into squares and serve.

Notes

Use parchment paper for easy removal.

Do not overbake to keep them fudgy.

Store in an airtight container for 3 days.
