Tender shredded chicken breast slow-cooked in a tropical savory sauce with pineapple and hoisin.

Ingredients

2 lbs chicken breast, boneless skinless

1 cup pineapple juice

1/2 cup brown sugar

1/4 cup hoisin sauce

1 tbsp soy sauce

1 tsp garlic powder

1/2 tsp ground ginger

Toasted sesame seeds and green onions for garnish

Instructions

1. Place chicken breasts in the bottom of the crockpot.

2. Whisk juice, sugar, hoisin, soy sauce, and spices in a bowl.

3. Pour the savory sauce over the chicken breasts.

4. Cook on LOW for 4–5 hours or HIGH for 2–3 hours.

5. Shred the chicken with two forks inside the pot.

6. Let chicken soak in the sauce for 15 minutes before serving.

Notes

Use gluten-free hoisin and soy sauce for a GF version.

Serve over jasmine rice or with a bell pepper salad.

Store leftovers in an airtight container for up to 4 days.
