Ingredients

1 large boiled potato, mashed and cooled

3 cups powdered sugar

3/4 cup creamy peanut butter

1 tsp vanilla extract (optional)

Instructions

1. Boil and mash the potato, then cool completely.

2. Gradually mix in powdered sugar until stiff dough forms.

3. Roll the dough between parchment paper to 1/4 inch thickness.

4. Spread peanut butter evenly over the dough.

5. Carefully roll into a log shape.

6. Chill for 30 minutes or until firm.

7. Slice into 1/2 inch pieces and serve.

Notes

Use instant potato flakes as a shortcut.

Adjust powdered sugar for dough stiffness.
