Ingredients

– 2 lbs boneless, skinless chicken breasts or thighs
– 1 lemon, juiced + zest
– 1 onion, diced
– 3 cloves garlic, minced
– 1 cup chicken broth
– 1 tsp dried thyme
– 1 tsp paprika
– Salt and pepper to taste
– Fresh parsley or cilantro for garnish

Instructions

1. Place chicken in the bottom of the crockpot.
2. Add diced onion, garlic, spices, lemon juice, and broth.
3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
4. Shred chicken with two forks and mix with the sauce.
5. Garnish with fresh parsley or cilantro and serve.
