Juicy and flavorful ground chicken meatloaf with garlic, Parmesan cheese, and Italian herbs baked to perfection.
2 lbs ground chicken
1 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
2 large eggs
4 cloves garlic, minced
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried basil
1/2 tsp dried parsley
1/2 tsp salt
1/2 tsp black pepper
1/4 cup whole milk
1. Preheat oven to 375°F (190°C).
2. Mix all ingredients gently until combined.
3. Shape into a loaf and place on a parchment-lined baking sheet or greased loaf pan.
4. Bake for 40–45 minutes until internal temperature reaches 165°F.
5. Prepare garlic Parmesan glaze (melt butter, sauté garlic, stir in Parmesan and parsley).
6. Brush glaze over meatloaf.
7. Bake an additional 5–7 minutes until golden.
8. Allow to rest before slicing.
Make ahead and store chilled for up to 3 days.
Freeze individual portions for up to 1 month.
Substitute turkey if preferred.
Serve with roasted vegetables or salad.
