Ingredients

**For the Crust:**
– 2 ½ cups all-purpose flour
– 1 cup unsalted butter, chilled and cubed
– 1 tsp salt
– 1 tsp sugar
– 6–8 tbsp ice water

**For the Filling:**
– 1 can (15 oz) pumpkin puree
– ¾ cup brown sugar
– ½ tsp salt
– 1 tsp ground cinnamon
– ½ tsp ground nutmeg
– ¼ tsp ground cloves
– 2 large eggs
– 1 cup heavy cream or evaporated milk

**Optional Decorations:**
– Whipped cream
– Chocolate shavings or candy eyes
– Mini ghost or bat cookie cutters for pie crust
– Caramel drizzle

Instructions

1. Prepare the crust by combining flour, salt, sugar, and butter. Add ice water gradually until dough forms. Chill for at least 1 hour.
2. Roll out the crust and place in pie pan. Prepare second disc for top or cutouts.
3. Whisk together pumpkin puree, sugar, spices, eggs, and cream until smooth.
4. Pour filling into crust, add decorative top, and crimp edges.
5. Bake at 350°F (175°C) for 50–60 minutes until set. Cover edges if browning too fast.
6. Cool completely before serving.

Notes

Decorate with powdered sugar, cocoa, whipped cream ghosts, or candy eyes. Mini pies are perfect for parties or gifts.
