Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 egg

1 tsp vanilla extract

1 1/4 cups all-purpose flour

1/4 tsp salt

1/2 cup shredded coconut

1/4 cup pineapple jam

Instructions

1.Preheat oven to 350°F (175°C) and line a pan.

2.Cream butter and sugar until fluffy.

3.Beat in egg and vanilla.

4.Mix in flour, salt, and coconut.

5.Roll into balls and make thumbprint indents.

6.Fill with pineapple jam.

7.Bake 15–20 minutes until golden.

8.Cool on a wire rack.
