Extra crunchy, juicy homemade chicken tenders with a sweet and spicy chipotle honey glaze.

Ingredients

2 lbs chicken tenders

1/4 cup flour (for marinade)

2 cups flour (for dredge)

2/3 cup cornstarch

2 tsp baking powder

1 tsp kosher salt

1 tsp black pepper

1 tsp chipotle chili powder

1 tsp cayenne pepper

1 tsp paprika

1 tsp garlic powder

12 oz sparkling water

Oil for frying

1/3 cup hot sauce

1/4 cup chipotle sauce

1 tbsp Worcestershire sauce

1/4 cup honey

Instructions

1. Toss chicken with 1/4 cup flour and spices; marinate 15 mins.

2. Whisk dry dredge ingredients in a large bowl.

3. Mix 1/2 cup dredge with sparkling water to make wet batter.

4. Heat oil to 350°F.

5. Dredge chicken: wet batter, dry mix, wet batter, dry mix.

6. Fry 6-8 minutes until light golden.

7. Increase oil to 375°F and fry 2 more minutes.

8. Whisk sauce ingredients, simmer, and brush over hot chicken.

Notes

Use cold sparkling water for a lighter crust.

Reheat in an air fryer to maintain crunch.

Sub maple syrup for honey if desired.
