These vibrant, naturally purple buns are incredibly soft and fluffy. Perfect as a sweet snack or a colorful dinner roll using real purple yams.
200g Purple sweet potato (steamed and mashed)
350g Bread flour
120ml Warm milk
50g Sugar
7g Instant yeast
40g Softened butter
5g Salt
1. Steam and mash the purple potatoes until smooth; let cool.
2. Whisk milk, sugar, and yeast in a bowl.
3. Add potato mash and flour; knead until a dough forms.
4. Incorporate butter and salt; knead until elastic (10 mins).
5. Let rise in a warm place for 1 hour.
6. Divide into 12 balls and let rise again for 45 minutes.
7. Bake at 350°F (175°C) for 20 minutes or steam for 15 minutes.
Use Okinawan or Stokes purple potatoes for the best color.
Store in an airtight container for up to 3 days.
Pairs perfectly with coconut jam or butter.
