The viral, crispy, and cheesy smash burger hack in a tortilla. A 20-minute dinner that combines juicy beef with golden quesadilla shells.
1 lb ground beef (80/20)
4 large flour tortillas
8 slices American cheese
1/2 yellow onion, finely diced
1/4 cup dill pickle slices
2 cups shredded iceberg lettuce
1/4 cup mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
1 tsp garlic powder
Salt and black pepper to taste
1. Mix mayo, ketchup, and mustard for the sauce.
2. Portion beef into four 4-ounce balls.
3. Heat a cast-iron skillet over medium-high heat.
4. Place a beef ball in the pan and smash thin with a spatula.
5. Season with salt, pepper, and garlic powder; cook 2-3 minutes.
6. Flip the patty, top with cheese and onions.
7. Place a tortilla on top, press, then flip the whole assembly.
8. Fold the tortilla in half and toast until golden.
9. Fill with sauce, lettuce, and pickles before serving.
Use a heavy spatula for the best smash.
Substitute with gluten-free tortillas if needed.
Store sauce in the fridge for up to 3 days.
