For the Donut Batter:
2 cups gluten-free flour
1 tbsp baking powder
1/2 cup sugar
2 large eggs
1 cup milk
2 tsp vanilla extract
For the Chocolate Glaze:
1 cup semisweet chocolate chips
1/2 cup heavy cream
2 tbsp butter
1 tbsp corn syrup
For the Pastry Cream Filling:
1 cup vanilla pastry cream
1.Mix the batter by combining gluten-free flour, baking powder, sugar, eggs, milk, and vanilla extract in a large bowl. Stir until smooth.
2.Rest the dough for about 10 minutes.
3.Shape the dough into donut forms.
4.Preheat air fryer to 350°F (175°C).
5.Air fry donuts in batches for 8-10 minutes until golden brown.
6.Prepare the chocolate glaze by melting chocolate chips, cream, butter, and corn syrup together.
7.Fill cooled donuts with vanilla pastry cream using a piping bag.
8.Dip filled donuts into warm chocolate glaze.
Store leftovers in the fridge for up to 2 days.
