A hearty and savory layers of taco-seasoned beef, creamy cheese, and a fluffy biscuit base.

Ingredients

1.5 lbs lean ground beef

1 cup yellow onion, diced

1 bell pepper, diced

1 packet taco seasoning

1/4 cup water

2.5 cups biscuit mix

1 cup milk

1/2 cup sour cream

1/2 cup mayonnaise

1 cup shredded Colby Jack cheese

1 can (10 oz) Rotel diced tomatoes with green chiles, drained

1.5 cups shredded cheddar cheese

2 tbsp green onions, chopped

Instructions

1.Preheat oven to 350°F (175°C).

2.Brown beef with onions and peppers; drain grease.

3.Stir in taco seasoning and water; simmer for 5 minutes.

4.Mix biscuit mix and milk; press into a 9×13 pan.

5.Par-bake biscuit base for 5 minutes.

6.Layer beef mixture over the biscuit base.

7.Spread drained Rotel over the beef.

8.Mix sour cream, mayo, and Colby Jack; spread on top.

9.Sprinkle with cheddar cheese.

10.Bake for 30 minutes until golden and bubbly.

Notes

Use Pepper Jack cheese for extra heat.

Substitute milk with water for the biscuit base if needed.
