– 1 lb smoked sausage, sliced into 1/4-inch coins
– 1.5 lb Yukon gold potatoes, small wedges
– 1 medium yellow onion, thinly sliced
– 2 tbsp olive oil, divided
– 1.5 tsp ranch-style seasoning
– 1/2 tsp paprika
– 1/2 tsp Italian seasoning
– 2 garlic cloves, minced
– Kosher salt and black pepper
– 2 tbsp grated Parmesan (optional)
– Chopped parsley for garnish
1. Sear sausage in oil until crisp; remove.
2. Brown potatoes with seasonings until nearly tender.
3. Add onion, then garlic; cook briefly.
4. Return sausage; toss and finish. Garnish and serve.
Bake on a sheet pan at 425F for 2535 minutes as an alternative. Reheat in a skillet to re-crisp.
