Using Peach Ginger Chili Jam as a Sweet and Spicy Glaze

A vibrant, ‘swicy’ preserve blending sun-ripened peaches with zesty ginger and a warm chili finish. Perfect for charcuterie boards and gourmet glazing.

Ingredients

4 lbs fresh peaches (peeled, pitted, and finely chopped)

1/4 cup fresh lemon juice

1 tbsp lemon zest

2 tbsp fresh ginger (peeled and finely grated)

1 to 2 red Fresno chilies (finely minced)

1 box (1.75 oz) powdered fruit pectin

5 cups granulated sugar

1/2 tsp butter (optional to reduce foam)

Instructions

1. Combine peaches, lemon juice, zest, ginger, and chilies in a pot.

2. Stir in fruit pectin until dissolved.

3. Bring to a full rolling boil over high heat.

4. Add sugar all at once and return to a boil.

5. Boil hard for exactly 1 minute, stirring constantly.

6. Remove from heat and skim off any foam.

7. Ladle into sterilized jars and process for 10 minutes.

Notes

Use freestone peaches for easier preparation.

Remove chili seeds for a milder flavor.

Store in a cool, dark place for up to 12 months.
