A delicious and easy Mexican weeknight dinner featuring seasoned chicken over fluffy rice, smothered in creamy white queso.

Ingredients

1.5 lbs chicken breast, sliced

2 cups cooked Mexican yellow rice

1 cup white queso dip

1 tbsp olive oil

1 tsp cumin

1 tsp smoked paprika

1 tsp garlic powder

Salt and pepper to taste

Fresh cilantro for garnish

Instructions

1.Season chicken with spices.

2.Sauté chicken in oil until cooked.

3.Warm the queso sauce.

4.Layer chicken over a bed of rice.

5.Drizzle generously with queso.

6.Garnish with cilantro and serve.

Notes

Use rotisserie chicken for a faster version.
