1.5 lbs gold potatoes, diced
1 lb ground turkey sausage
2 cups carrots, sliced
1 cup celery, diced
1 yellow onion, diced
4 cups vegetable broth
2 cups whole milk
3 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste
1. Brown sausage in a large pot; remove and set aside.
2. Sauté onion, carrots, and celery in the same pot until soft.
3. Add garlic and thyme; cook 1 minute.
4. Stir in potatoes and broth; simmer 15-20 minutes until tender.
5. Return sausage to pot and stir in milk.
6. Heat through and mash a few potatoes to thicken.
