A moist and tender banana bread topped with a rich, sticky caramelized banana layer.
1/2 cup unsalted butter, melted
1 cup light brown sugar
3-4 ripe bananas, sliced
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 eggs
1 tsp vanilla extract
1 cup mashed bananas
1/4 cup sour cream
1. Preheat oven to 350°F (175°C).
2. Pour melted butter and brown sugar into a 9-inch pan.
3. Layer sliced bananas over the sugar mixture.
4. Whisk dry ingredients in a medium bowl.
5. Cream softened butter and sugar in a large bowl.
6. Beat in eggs, vanilla, mashed bananas, and sour cream.
7. Stir in dry ingredients until just combined.
8. Spread batter over bananas and bake for 45-50 minutes.
9. Cool 10 minutes, then invert onto a plate and serve.
Use very ripe bananas for the best flavor.
Do not overmix the batter to keep it light.
Flip while warm to ensure the caramel doesn’t stick.
