Cheesy Broccoli Chicken and Rice Skillet

Creamy, family-friendly one-pan dinner with broccoli cheddar chicken flavors and cozy rice. Quick stovetop method with optional dump-and-bake finish.

Ingredients

– 2 tbsp butter
– 1 small onion, finely diced
– 3 cloves garlic, minced
– 1 cup long-grain rice, rinsed
– 2 cups low-sodium chicken broth
– 1 lb chicken breast, diced
– 3 cups broccoli florets
– 1 can (10.5 oz) cream of chicken soup or 1 cup heavy cream
– 2 cups shredded sharp cheddar, divided
– 1 tsp paprika
– 1/2 tsp dried thyme
– 1/2 tsp onion powder
– 1/2 tsp kosher salt
– 1/4 tsp black pepper
– Optional: 1/4 tsp Cajun seasoning

Instructions

1. Sauté onion in butter 3 min; add garlic 30 sec.
2. Stir in rice; toast 1 min. Add broth; simmer 8 min.
3. Add chicken; cook 5–6 min until mostly opaque.
4. Fold in broccoli and cream; simmer 3–4 min.
5. Stir in 1.5 cups cheddar; season.
6. Top with remaining cheddar; cover/broil to melt; rest 5 min.

Notes

For dump-and-bake, combine in casserole (hold some cheese), cover and bake until rice is tender; finish uncovered to brown.
