– 1 lb pasta (penne or fusilli)
– 1 lb Italian sausage or chicken
– 1 onion, diced
– 3 cloves garlic, minced
– 1 can (14 oz) diced tomatoes
– 3 cups chicken broth
– 2 cups spinach or kale
– 1 cup shredded cheese (optional)
– Olive oil, salt, pepper, Italian seasoning
1. Heat olive oil in a large skillet. Add sausage or chicken and brown.
2. Stir in onion and garlic, cook until softened.
3. Add pasta, tomatoes, and broth directly into the skillet.
4. Cover and simmer until pasta is cooked through, about 15 minutes.
5. Stir in spinach and cheese if using. Season with salt and pepper.
