1.5 lbs chicken breast, cubed
3 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tbsp dried oregano
2 cups cooked rice or quinoa
1 cup diced cucumber
1 cup cherry tomatoes
1/4 cup feta cheese
1/4 cup Kalamata olives
1/2 cup Greek yogurt
1. Marinate chicken in oil, lemon, and spices for 20 mins.
2. Air fry at 380°F (190°C) for 10–12 mins.
3. Mix yogurt and lemon for quick tzatziki.
4. Prep cucumber, tomatoes, and olives.
5. Assemble bowls with rice base.
6. Top with chicken, veggies, feta, and sauce.
