A creamy, high-protein breakfast bake that tastes like a healthy blueberry cheesecake in a bowl.
3/4 cup cottage cheese
1 large egg
1/2 tsp vanilla extract
1/4 cup fresh blueberries
1 tbsp almond flour
1/2 tsp maple syrup
Pinch of cinnamon
1. Preheat oven to 350°F.
2. Mix cottage cheese, egg, vanilla, and cinnamon.
3. Stir in almond flour and sweetener.
4. Fold in blueberries gently.
5. Pour into an oven-safe bowl.
6. Bake for 25–28 minutes until set.
7. Cool for 5 minutes and serve.
Use frozen berries if fresh aren’t available.
Strain cottage cheese for a thicker texture.
Reheat in the microwave for 30 seconds.
