Ingredients

– 1½ pounds beef chuck roast, thinly sliced or cut into strips
– 1 cup low-sodium beef broth
– ½ cup low-sodium soy sauce
– ⅓ cup packed dark brown sugar
– 1 tablespoon sesame oil
– 3 cloves garlic, minced
– 1 tablespoon rice vinegar (optional)
– 2 tablespoons cornstarch
– ¼ cup cold water
– 3 to 4 cups broccoli florets, fresh or frozen
– Cooked jasmine rice or noodles for serving
– Sesame seeds and sliced green onions for garnish (optional)

Instructions

1. Whisk beef broth, soy sauce, brown sugar, sesame oil, garlic, and rice vinegar together in a bowl.
2. Optional: Brown beef strips quickly in a skillet, then drain fat.
3. Add beef and sauce to crockpot; toss to coat. Cook on LOW for 2½ to 3½ hours.
4. Mix cornstarch and cold water; add slurry to crockpot 30 minutes before done to thicken sauce.
5. Add broccoli, stir, cook uncovered for 20-30 mins until tender and vibrant.
6. Serve over jasmine rice or noodles, garnish with sesame seeds and green onions.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently. Freezes well for up to 2 months.
