These Parmesan Roasted Potatoes are scored and coated in a savory parmesan-herb paste, then roasted until shatteringly crispy on the outside and buttery soft on the inside.

Ingredients

1.5 lbs baby gold or red potatoes, halved

3 tbsp extra virgin olive oil

1/2 cup finely grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp smoked paprika

1/2 tsp sea salt

1/4 tsp black pepper

Fresh parsley for garnish

Instructions

1. Preheat oven to 425°F (220°C).

2. Wash and thoroughly dry the potatoes.

3. Score the flat side of each potato in a crosshatch pattern.

4. Mix olive oil, parmesan, and spices into a thick paste.

5. Dip the flat side of each potato into the paste.

6. Place potatoes cheese-side down on a lined baking sheet.

7. Roast for 25–30 minutes until golden and crispy.

8. Let rest for 5 minutes before serving.

Notes

Use freshly grated parmesan for the best crust.

Do not overcrowd the pan or potatoes will steam.

Reheat in an air fryer to maintain crispiness.
